Simple Sauteed Tomatoes


So simple, so quick, but so delicious.  A handful of cherry tomatoes, a bit of garlic, a dash chopped spinach, and a splash of balsamic vinegar...wow.  Literally bursting with flavor!


Ingredients
*1 pint cherry tomatoes
*1 cup chopped spinach
*1 Tbs. olive oil (or you can just use cooking spray)
*2 cloves garlic crushed
*2-3 Tbs. balsamic vinegar
*Salt and Pepper



Directions
1.  Over medium heat, warm the olive oil and add the garlic.  Cook for 30 seconds and toss in the tomatoes.    Cook over medium heat for about 3 minutes until the tomatoes almost start to burst (watch these, it is easy to overcook them)

2.  Add the chopped spinach to wilt and finish with a splash of balsamic.  Season with salt and pepper.

Serving Suggestions:  Serve as a side to any pasta dish or main course.  Add a sprinkle of parmesan for an even more delicious dish!
