Puffy Apple Pancake


Try this recipe the next time you wake up thinking that you could really go for some delicious pancakes but don't want to put in the effort of going to that fancy, over-priced breakfast joint. It will surely fulfill your longing for something sweet and full of butter, and it's so easy to make that you'll be eating this pancake before you'd even get a seat at the restaurant. 
Ingredients:
1 Medium Apple, sliced into thin wedges about 1/2 inch thick (or you can get creative and use pears, plums, bananas, berries...)
6 Tbsp. Butter
1/2 Cup Flour
1/2 Tsp. Salt
1/2 Cup Milk
3 Eggs
1 Tsp. Vanilla Extract
1/3 Cup Packed Brown Sugar
2 Tsp. Cinnamon
Juice from 1/2 lemon, or about 3 Tbsp. 
You'll also need a cast-iron or oven-proof skillet to bake your pancake in

Directions:
1.  Preheat your oven to 450. In your cast-iron skillet melt 3 Tbsp. of butter. Add the apples and sauté for 5 minutes, or until the apples soften and are golden brown.  

2.  Whisk together the flour, salt, milk, eggs and vanilla in a large bowl. Pour this batter over the apples in the skillet. Don't worry if the pan is still hot and your butter is still bubbling when you pour your batter, there's enough butter here that your pancake won't burn. 


3.  Place the skillet in the oven and bake for 10 minutes, or until the pancake has puffed and the batter is set. Remove from oven. 

4.  While waiting for the pancake to bake, mix together the brown sugar and cinnamon, and melt the remaining 3 Tbsp. butter. Pour the butter over the pancake once you remove it from the oven. Sprinkle the sugar and cinnamon over the top. Bake the pancake again for another 5 minutes, or until the sugar begins to caramelize. 

5.  Remove from oven, squeeze the lemon juice over the top and serve for either your well deserving friends or for people you want to impress.
