Coconut Macaroons

A crisp outside,  soft warm inside...It only takes 5 ingredients to get to coconut heaven!


Ingredients
14 ounces sweetened, shredded coconut
14 ounces sweetened condensed milk
2 large egg whites
1 teaspoon vanilla
1/4 teaspoon salt

Directions
Preheat oven to 325 degrees.  In a large bowl, mix coconut, sweetened condensed milk, and vanilla.  

Using and hand mixer or stand mixer, beat egg whites and salt on high speed until medium-firm peaks (about 5 minutes)

Carefully fold egg whites into coconut mixture.  

On a cookie sheet lined with parchment or wax paper (these stick, so definitely use parchment), scoop about tablespoon-size rounds of the coconut mixture onto the tray.  Bake at 325 degrees for 30 minutes or until golden brown on top.

Optional topping ideas:
I like to drizzle Nutella and/or caramel over the macaroons.  Although, they are delicious on their own too! Bon appetite!
