First attempt at shrimp... a seemingly daunting task. Shrimp are actually quite easy to prepare, but you just have to be cautious not to overcook these little crustaceans. Perhaps the most simple and one of the most flavorful methods is to roast shrimp...a drizzle of olive oil, a dash of garlic, and 8 minutes in a hot oven. Pair with roasted parmesan-crusted tomatoes for a savory, summery supper!
For the Shrimp
Ingredients
*12-15 peeled and deveined shrimp (thawed, if frozen)
*2 Tbs. Olive Oil
*2 Cloves of crushed garlic
*1 Tbs. lemon juice
1. Preheat oven to 400 degrees.
2. In a large bowl toss shrimp with olive oil, salt, pepper, lemon juice, and garlic.
3. Spray a baking sheet with cooking spray and spread shrimp on it.
4. Roast for 7 to 8 minutes (no need to toss). Serve with extra lemon juice, pesto, tomato sauce, or your favorite cocktail sauce.
Parmesan-crusted Tomatoes
Ingredients
*2 large tomatoes (red or green), sliced in rounds
*1 cup panko bread crumbs
*1/2 cup grated parmesan cheese
*3 cloves crushed garlic
*1 tsp salt
*1/2 tsp pepper
*1 Tbs. parsley, chopped
*1 egg
*Cooking spray or olive oil
Directions
1. Preheat oven to 400. Beat egg in a bowl and thin with a bit of water.
2. In a separate bowl, combine bread crumbs, cheese, garlic, salt, pepper, and parsley.
3. Spray a baking sheet with cooking spray. Dip tomato in egg wash and then into bread crumbs. Press bread crumbs into tomato and place on baking sheet. Sprinkle with more parmesan cheese and spray with a bit more cooking spray.
Serving Suggestions: Drizzle tomatoes with pesto, tomato sauce, or balsamic!
