Baked Falafel and Homemade Tzatziki


The flavors of the middle east are brought to 51 Porter in these tender on the inside and crisp on the outside baked falafels.  The cool and creamy tang of homemade tzatziki is the perfect complement to this middle eastern favorite.


For the Falafel:
Ingredients (makes 8 small- and 6 medium-sized falafel patties)
*2 cups chick peas
*3 cloves garlic, crushed
*1/2 cup cilantro, chopped
*1/4 cup flat-leaf parsley, chopped
*2 Tbs. lemon juice
*1/2 cup panko bread crumbs
*1 tsp. baking powder
*1 ½ tsp. cumin
*1 tsp. salt
*1/2 tsp. black pepper
*1/4 tsp. chili powder
*Olive oil to brush on top of patties.

Directions
1.  Preheat oven to 400 degrees.

2.  Combine all ingredients except oil in a food processor and pulse until even consistency. 

3.  Form into patties about 2 inches in diameter and brush both sides with oil.  Place on a baking sheet.

4.  Bake at 400 degrees for 10 minutes on each side.  The falafel will be golden brown and delicious.



For the Tzatziki:
Ingredients
*1 cup greek yogurt
*2 cloves garlic, crushed
*1/4 cup cilantro, chopped
*1/4 cup flat-leaf parsley, chopped
*1 Tbs. lemon juice and zest if you have it
*1 cucumber, peeled and chopped finely
*Salt and Pepper to taste

Directions
Combine all ingredients in a bowl and refrigerate for at least 30 minutes before serving.

Serving Suggestions:
Serve warm falafel over a bed of fresh spinach tossed lightly with olive oil, lemon juice, salt, and pepper.  Top with tzatziki and feta cheese!  Alternately, add spinach, falafel, tzatziki, feta, and hummus to a warm pita!
