Berry Crumbles



Cold outside? How about a winter warm-up?  These individual berry crumbles are warm, delicious, and the perfect end to a chilly day.  An example of a healthful "dessert flip", this recipe combines loads of sweet, warm berries and a touch of decadent crumble topping.  Cozy-up to a crumble tonight!


Ingredients (makes 6 small ramekins, easy to cut recipe in half)
½ cup flour
½ cup brown sugar
½ cup plus 2 Tbs. granulated sugar
½ tsp cinnamon
1 pinch salt
½ cup oats
6 Tbs cold butter, cut small
4 cups berries (I used Trader Joe's Frozen Berries)
2 Tbs cornstarch
Zest of one orange

Directions
1.  In a bowl, combine flour, brow sugar, 2 Tbs. granulated sugar, cinnamon, salt, and oats.  Cut in cold butter and keep cold until ready to use.
2.  In a separate bowl, defrost fruit (microwave about 30 seconds).  Add 1/2 cup granulated sugar, 2 Tbs. cornstarch, orange zest.

3.  In 6 ramekins or small mugs, divide fruit and top with crumble topping.  Bake at 350 degrees for 35 minutes, until warm and bubbly.  Top with a dollop of vanilla ice cream.  Yum! :)
