Towering Tomatoes with Bulgur & Mozzarella


Bulgur is a quick-cooking, deliciously nutty whole grain that is often used in European cooking such as tabbouleh (tomato and wheat salads) and is similar to couscous.  However, it actually has a higher nutritional value because it is a whole grain, while most couscous is a refined pasta.  Try these delicious tomato stacks with only a few simple ingredients: fresh tomatoes, nutty bulgur, creamy mozzarella, a simple dressing and bon appetite!



Ingredients (Serves about 4)
*1 cup bulgur wheat
*3-4 tomatoes, depending on the size, sliced in rounds
*3 cloves garlic, crushed
*1 Tbs. olive oil
*1 Tbs. lemon juice
*1-2 Tbs. balsamic vinegar
*1 medium red onion, sliced thin
*1 ball fresh mozzarella, sliced
*If you have fresh herbs/arugula/spinach…add this to
*Salt and Pepper
*Extra balsamic and olive oil for drizzling (optional)


Directions
1.  Cook bulgur according to package instructions (usually just add a certain about of boiling water, cover, and let sit for about 5 minutes, and fluff with a fork).

2.  Toss bulgur with oil, garlic, vinegar, lemon juice, and season with salt and pepper.  Add chopped herbs, spinach, or arugula if desired.

3.  To assemble stacks, take a tomato slice, season with salt and pepper and place on a dinner plate.  Top with a heaping tablespoon of the bulgur mixture and a few thin slices of onion and a slice of mozzarella.  Top with another tomato and season with salt and pepper.  Continue building the layers as high as you want.  Finish with an extra splash of balsamic and olive oil.  Enjoy the simplicity!
