Huevos Rancheros


Hola, muchachos! Mexican food has a special place in 51 Porter's heart. Such great flavors! Huevos rancheros, which translates as "eggs country style," is a classic Mexican dish featuring fried or scrambled eggs accompanied with refried beans, avocado, fried potatoes...and whatever else you desire. One weekend Steph and I concocted our own huevos rancheros. We scrambled up some eggs, sprinkled in some soy chorizo, added in some cilantro and beans, and topped with some chunky salsa. While home in Oakdale I made some huevos rancheros with a few more additions, which drew compliments from my dad, the meat and potatoes man. Great success!


Ingredients:
4 eggs
(Soy) chorizo (add in however much you'd like)
1 potato, chopped
1 tbsp olive oil
1/4 cup onion, chopped
2 cloves garlic, minced
Cilantro
Salsa
Sour cream/non-fat Greek yogurt
Cheddar cheese (Monterey Jack or Pepper Jack are also great)
Beans (pinto, black, or refried)

Directions:
1. Heat olive oil in skillet, adding in minced/crushed garlic and onion. Saute for 5 or so minutes, or until onions become translucent.
2. Add in the (soy) chorizo, cooking for a few more minutes before you add the eggs.
3. Add in eggs to the rest of the ingredients, scrambling them.
4. Place the egg mixture atop an english muffin or in a burrito. You can add beans, sour cream, cheese, fresh cilantro, a little squirt or lemon/lime juice, and some salsa and/or hot sauce. I guarantee it will be a tasty and sating meal, as it's brimming with protein and fiber. Enjoy!

  1. Huevos Rancheros are actually a fried egg on top of a corn tortilla with red salsa on top of it (made of tomato, onion, and chile serrano among other delicious ingredients). They do not have chorizo on them unless you make black beans with chorizo.
    Sour cream is never used in Mexican cuisine because there is no sour cream in Mexico :) as well as no english muffins or burritos (what's that! a Mexican would say, did you mean burritA? a quesadilla with corn tortilla, cheese and ham??)
    Maybe you'd enjoy this way of Mexican huevos rancheros too.
