Whipped Parsnips and Carrots
With Kelly gone, Renee and Steph have been trying to be creative in our meal adventures. Today we tried a new take with the carrots and parsnips that were patiently waiting to be used. Carrots + Parsnips + Food Processor = A tasty side dish to add to your table.
Ingredients:
Equal amounts of carrots and parsnips
1 Tbsp. Butter
1/2 Tsp. Nutmeg
Directions:
1. Bring a large pot of water to a boil. In the meantime chop parsnips and carrots. The carrots tend to cook quicker, so chop them a bit finer than the parsnip.
2. Add the carrots to the boiling water first and boil for about 5 minutes, then add the parsnips. Boil until tender, about 5 minutes after you add the parsnips. Remove from heat
3. Strain the carrots and parsnips and puree in the food processor with the butter and nutmeg. Add salt to taste.
