Roasted Brussel Sprouts...Seriously, try them!

Forget childhood memories of boiled or microwaved sprouts; these roasted gems create a crisp, golden outer layer while maintaining a tender, leafy inside.  Delicious with a dash of sea salt and a sprinkle of parmesan...seriously, try them!

Ingredients:
*20-30 small brussel sprouts
*1/2 cup red onion, chopped
*2 tsps. sea salt
*1 tsp. ground black pepper
*2-3 cloves garlic, crushed
*~3 Tbs. olive oil
*1/2 cup parmesan cheese, grated (optional)

Directions:
Preheat oven to 400 degrees. Cut off the hard end of the brussel sprouts and halve each one.  On a baking sheet, toss all ingredients together, except the cheese.  Place in oven and roast for 30-40 minutes, until golden brown and crisp.  Stir every 10 to 15 minutes!

Serving Suggestions:
*Sprinkle with an additional bit of sea salt for a salty bite.
*Add a sprinkling of parmesan cheese.
*Add a drizzle of balsamic vinegar for a nice kick!

51 Porter Factor: Quite frankly, I think roasted brussel sprouts are some of the loveliest vegetables you'll get. The green and golden hues make them look truly ornate while they're hanging out on your plate. Try to eat these babies in the winter, as they are a winter crop and that's when the flavors will really burst!
