Cookie Dough Bites


These are a holiday favorite.  Shout out to Hali who gave us this delicious recipe!


Ingredients:

  • 1/2 cup butter (1 stick)
  • 3/4 cup brown sugar
  • 1 tsp. vanilla
  • 2 cups flour
  • 1, 14 ounce can sweetened condensed milk
  • 1/2 cup mini chocolate chips (semisweet or milk)
  • 1 cup chopped pecans (or walnuts, I toasted them and ground them in the food processor lightly)
  • 1 1/2 pounds semisweet chocolate chips (you could use milk chocolate too)
  • 1/2 cup white chocolate chips (optional, for drizzle on top)

Directions:
1.  Mix butter and brown sugar in a large bowl until creamy (an electric mixer is great for this job).


2.  Add vanilla.


3.  Slowly add the flour and then the sweetened condensed milk.


4.  Add the mini chocolate chips and nuts.  Mix until all ingredients are combined


5.  Drop by tablespoonfuls onto cookie sheets lined with parchment or wax paper. (About 4 dozen balls).  Don't worry about shaping them into round balls yet; it is easier to shape them when they are chilled.


6.  Chill for about 2 hours in the refrigerator.



7.  Remove from the refrigerator and shape into balls.


8.  Melt chocolate chips with a double-boiler.  (boil a pot of water about 1/3 full.  Place a heat-safe bowl on top of the boiling water so that it is over the water not in direct contact with it.  Keep the water at a low simmer and stir chocolate frequently).


9.  Dip each ball in the chocolate and roll around to coat all sides.  This can be a messy job and sometimes it helps to use chopsticks or a fork to navigate the cookie dough bites (if you have any better tips, please share!)



10.  Place chocolate coated cookie dough balls on a clean cookie sheet lined with a new piece of parchment or wax paper.  Continue until all bites are coated with chocolate.



11.  (Optional) In a ziplock bag, place the white chocolate chips.  Microwave for 15 seconds and remove and squish around to get the chocolate to start to melt.  Place the bag back in the microwave for 10 second intervals until all chocolate is melted.  (Careful to go no more than 10 seconds because the chocolate can burn very fast).


12.  Cut a small hole in the corner of the white chocolate bag and drizzle white chocolate over the tops of the cookie dough bites.


13.  Place cookie dough bites in the refrigerator for at least two hours to harden.  Enjoy!  (Store in an airtight container in the refrigerator for about 1 week).

  1. I can easily eat a dozen of those decadent morsels in one sitting. My childhood weakness...sweetened condensed milk... Keep up the good work ladies.
