Caramelized Onion and Feta Tartlets


These little gems are a great, hearty appetizer for any occasion!


Ingredients
*2 Sheets Puff Pastry
*~2 cups onion, chopped (red, white, sweet onions are all great)
*2 Tbs. butter
*2 cloves garlic, crushed
*1 egg, beaten
*1 tsp. salt
*1/2 tsp ground black pepper
*1/3 cup cream (or milk)
*~3/4 cup crumbled feta (you could also do half goat cheese, half feta)
*2 Tbs. chopped scallions

Directions
1.  Melt butter in a skillet over medium heat and add onions.  Saute over medium heat for 15-20 minutes or until gold brown and caramelized.  About halfway through, stir in the garlic. Set aside to cool.
2.  Meanwhile, unroll the puff pastry and cut twelve round disks from each sheet, about 2 ½ inches in diameter.  I used an inverted wine glass to cut the disks.
3.  Lightly spray a mini cupcake pan with cooking spray and fit each puff pastry disk into each well of the pan.
4. In a bowl, add the caramelized onion-garlic mixture, egg, salt, pepper, cream, cheese, and one tablespoon of the scallions.
5.  Fill each puff pastry shell with about 2 teaspoons of filling.  Top with remaining scallions and a bit more crumbled feta (optional).
6.  Bake at 350 degrees for about 30 minutes until golden brown. Mmm…
