Thanksgiving: Caramelized Onion Gravy (AKA: Awesome Sauce)


Caramelized Onion Gravy...'nough said!



*Two variations of this were made, one vegetarian and one with the turkey drippings!

Ingredients
*1 Stick Butter :)
*1 1/2 cup onion, chopped (we used red onions)
*About 1/2 cup flour (maybe a bit more)
*1 teaspoon salt at least
*1/2 teaspoon black pepper, ground
*About 3 cups vegetable stock
*3 cloves garlic, crushed
*1 teaspoon poultry seasoning (or a dash of fresh rosemary, sage, and/or thyme)
*About 3/4 cup white wine
*Turkey drippings (if non-veg)

Directions:
1.  In a saute pan over medium-high heat, add butter and onions.  Cook for about 15 minutes, until onions are deep brown and caramelized.

2.  Add flour and cook together with onions for about 2 minutes over low-heat.
3.  Meanwhile, in a saucepan over medium heat, heat vegetable stock and wine.  Add the onion/flour mixture, salt, pepper, garlic, and herbs.  Whisk and cook over medium heat until thick.  Gravy will thicken with heat, but if not thickening, add a bit more flour.

4.  I split the recipe in half and left half vegetarian and added the turkey drippings to the rest.

SERVE OVER EVERYTHING! :)
