Sweet Potato Fries





Ingredients:
2 Sweet Potatoes, peeled and sliced in thin wedges
About 2 Tablespoons olive oil (want enough to coat all potatoes)
About 1 1/2 teaspoons salt (sea salt is great for this)
About 1/2 teaspoon ground black pepper
**Note: you could spice these up with chili powder, garlic powder, or cumin...or just have them classic!


Directions:
1.  Preheat oven to 425 degrees.  
2.  Toss everything together on a baking sheet and make sure all potatoes are coated with the spices and oil.
3.  Roast for about 30 minutes, stirring every 10 minutes...until crisp, tender, and golden!


These are delicious alone with a sprinkling of sea salt or dipped in some ketchup.  However, you like them...they will go fast!!! 
Try serving them as a side to the sweet potato veggie burgers posted below!

Kelly's Kut Rating:  These fries are sooo simple, I cannot believe we've never tried them before.  No bumps, bruises, or burns were suffered in the making of these fries...but even if injuries occurred, the end product was so delicious that the pain would simply disappear.
