White Chocolate and Nutella Tartlets

Cloud like waifs of white chocolate mousse + the smooth, nutty creaminess of nutella, combined with the crunch of a buttery phyllo cup makes this dessert a great success!

Ingredients (makes about 24 mini tartlets):
1. 1 Tbs. butter, melted
2. 2 sheets phyllo dough
3. 1 cup heavy cream
4. 1/2 cup white chocolate chips
5. 1/4 cup roasted walnuts or hazelnuts, finely chopped
6. Nutella

Directions:

1. Preheat the oven to 350 degrees.

2. Spread one sheet of phyllo out on a cutting board and brush lightly with butter. Place the second sheet of phyllo on top and brush top with a bit more butter. Cut the phyllo using a big knife or pizza cutter into 24 small squares (6 rows long and 4 columns).

3. Brush any remaining butter into the wells of a 24-count mini-cupcake tin.

4. Take each phyllo square and gently fit into wells of the mini-cupcake pan.

5. Bake for 10 minutes at 350 degrees until golden brown and crisp. Remove from oven and cool.

6. Meanwhile, using an electric mixer (or food processor) add 3/4 cup cold heavy cream. Whip on high until firm peaks are achieved. Set aside (if using a food processor, may need to do in batches).

7. In a small saucepan, melt the white chocolate and the remaining 1/4 cup cream over low heat. Once melted together and combined, set aside to cool and stir in roasted finely chopped nuts.

8. Carefully fold the cooled white chocolate into the whipped cream a little bit at a time - careful not to deflate the cream. Scoop the mousse into a ziplock bag and refrigerate until ready to assemble.

9. When ready to serve, heat the nutella for about thirty seconds in the microwave and spoon about 1 tsp. into the bottom of each phyllo nest. Snip the corner of the ziplock bag containing the mousse and pipe the white chocolate mousse atop the nutella. Garnish with chocolate shavings or chopped nuts!

This is so simple...but soooooo good!
