Baked Apples and Homemade Granola


This was a make shift recipe for baked apples, feel free to switch things up and make this your own!


Ingredients:
As many medium sized apples as you want to make
1/4 Tbs. Butter per apple
~2 Tbs Sugar
Boiling Water (enough to be a half an inch from the base of the apples when in casserole dish)
Granola--Any granola should do, but here is a recipe for home made if you want it:
-2 Cups Oats
-1/2 Cup Peanut Butter
- ~2 Tbs Honey
- Tbs Flax Seed
-1/2 Cup Raisins or Craisins
-1/2 Cup Walnuts, chopped finely
-1/2 Tsp Cinnamon
-A Pinch of Salt
Granola:
1. Toast the oats, nuts and flax seed together for about 10 minutes at 375 degrees F.
2. Remove from heat and add remaining ingredients. Stir.





Apples:
1. Pre-heat oven to 375 degrees F. Begin boiling water.

2. Core apples, use an apple corer if you have one, I didn't so I just used a boning knife. This definitely takes practice, but it helps to cut out the core in chunks, since you don't want to actually cut all the way through the apple. Cut out the core, starting like you would if you were to cut the top off a pumpkin as if you were preparing to carve it.

3. Add the sugar to the granola (either homemade or store
bought), mix. I also like to add more cinnamon, it's up to you!

4. Place the cored apples in a glass casserole dish, stuff with granola/sugar mix. Top with a 1/4 Tbs of butter.

5. Pour boiling water into the casserole dish. This helps to regulate the temperature while in the oven.

6. Bake at 375 degrees for 20-30 minutes, or until fork tender.


To Serve:
Serve each apple with a hearty scoop of vanilla bean ice cream, and maybe another sprinkle of cinnamon. Yum!

Kelly Kut Rating: Injuries can happen without an apple corer. Have the band-aids on hand, or on your hand.

Taste? Mmmmm-gasm scale: These baked apples are pretty much the epitome of a food orgasm, so the golden standard of 10,000 mmmmm-gasms occurred in my mouth. Oh my freakin' god, amazing.

Looks?
Hotty Hot Hotness: Oh man, the apples explode with yummy peanut buttery granola when you cut into them. This gooey warmth paired with the cold ice cream is a fall treat indeed.
