Florentines








Take toasted almonds, homemade caramel, a dash of orange zest…and let’s make a cookie! These wafer-thin lace Florentines are delicious on their own, dipped in chocolate, or as a dessert topper. Give ‘em a try!


Ingredients (Makes about 20 cookies)

1 cup ground almonds (Trader Joe’s sells ground almonds or just grind them up)
1 Tbs. Flour
1 ½ tsp. grated orange zest
¼ cup butter (1/2 stick)
3 Tbs. whipping cream
1 Tbs. honey
Optional: Chocolate to dip or drizzle.

Directions
Preheat oven to 350 degrees. Combine flour, almonds, and zest in a bowl.
In a saucepan over medium heat, melt butter. Add sugar, cream, and honey. Cook over medium meat until sugar dissolves. Stir continuously and watch during this process, as sugar can burn easily.
Remove sugar mixture from heat and stir into almond mixture. Cool batter 20 minutes and stir occasionally.

Spoon 2-teaspoonful mounds of batter onto a cookies sheet lined with parchment paper. Make sure to not crowd the tray because the cookies spread out. Flatten a bit and bake for 10 minutes. Cool completely. Dip in chocolate, drizzle with chocolate, or top some ice cream and enjoy!
