Brussels Menu: Mediterranean Baguette Stuffing


What to do with half a leftover baguette from one of the many delicious bakeries wafting bread aromas throughout the streets of Brussels?  Well, if you find yourself in that situation, try this Mediterranean baguette stuffing.  Cube-up stale bread, toss with balsamic and olive oil, spinach, garlic, fresh market tomatoes, cheese, and bake till warm and bubbly.  Perfect side for the spinach-feta chicken Kiev...who knew stale bread could be so good!



Ingredients
*Left over baguette (however much you have), the more stale and hard the better, chop in cubes (I used 1/2 a baguette)
*About 2 tomatoes
*2 cups spinach, chopped
*3-4 cloves garlic, crushed
*2-3 Tbs. olive oil
*4 Tbs. balsamic vinegar
*Salt and Pepper
*About ½ cup cheese (parmesan or mozzarella work great), grated or shredded
Directions
Preheat oven to 375 degrees.  Toss bread with all ingredients and ½ the cheese in an oven-safe dish.  Sprinkle the top with the remaining cheese and bake for about 20 minutes or until the cheese is bubbly and warm.  Mmmm…who knew stale bread could be so good!
