Brussels Challenge #9: A little Mexican in Brussels - Chicken Fajitas avec Lime-Cilantro Rice

I’ve been in Brussels for almost three months. I love the French-inspired food, international restaurants, and Belgian classics…but as a California native, I miss my Mexican food. Time to bring it to Brussels where cilantro may be called coriander, but my guac is still delicious/délicieux/delicioso!



For the Fajitas
Ingredients:
*1 Tbs. olive oil
*1 medium onion, chopped
*2-3 cloves garlic
*2 bell peppers, red and/or yellow
*2 chicken breasts cut in chunks
*2 Tbs. cumin
*1/2-cup corn kernels (canned or off the cob)
*Zest of one lime
*2 Tbs. lime juice
*1/2 cup chopped, fresh cilantro
*Salt and pepper

Directions:
1. In a skilled heat oil and sauté onions for about 2 minutes. Add garlic and sauté another 2 minutes.
2. Add peppers and 1 tbs. cumin and corn. Sauté another 4 minutes. Transfer to a plate.
3. In the same skillet add the chicken and toss with lime juice, lime zest, salt, pepper, and remaining cumin. Cook for about 5 minutes, stirring occasionally until the chicken is cooked. Add back the vegetables and warm through. If need be, add a bit of lime juice or water to make a bit of a sauce. Sprinkle with cilantro and more lime juice if desired.
4. Serve over cilantro rice (recipe follows) and serve with guacamole, beans, feta cheese, salsa, and tortillas/chips,
For the Lime-Cilantro Rice
This is a quick version: To one cup cooked rice, add 2 Tbs. lime juice, ½ Tbs. cumin, salt, pepper, and ½ cup chopped, fresh cilantro. Fluff with a fork.
