Galettes



Think pizza...in a buttery, flaky, warm crust.  This basic galette dough recipe serves as a canvas for any filling from savory to sweet.  Perfect as an appetizer or main meal paired with a simple salad.  Here is the basic dough and filling ideas:




Basic Galette Dough
Ingredients
*1 1/4 cup flour
*1/4 tsp. salt
*1/2 cup cold butter (1 stick), cut in pieces
*1/4 cup plain Greek yogurt or sour cream
*2 tsp. white wine vinegar
*1/4 cup cold water

Directions
1.  Combine flour, salt, and butter.  Use your hands to mix in the butter until it is about the size of peas.  Using cold butter helps to get a flaky dough.

2.  Add the yogurt/sour cream, white wine vinegar, and water.  Stir just until combined, but do not over-mix.  Form into a ball and wrap in parchment paper or plastic wrap.  Place in the refrigerator to chill for about an hour (can be made ahead of time).

3. When ready to fill, preheat oven to 350.  Remove dough from refrigerator and either cut in half for smaller galettes or use the whole piece for a larger galette.  Roll the dough out between two pieces of wax or parchment paper (about 1/4 inch thick).

4.  Place on a baking sheet lined with parchment paper.  Add fillings and pull up sides of dough slightly to cover part of the filling.  Bake for about 30 minutes at 350!


Filling Ideas:
1.  Caramelized onion, fig preserve, and feta.
2.  Apple, Spinach, and Cheddar
3.  Asparagus, Tomato, and goat cheese
