This sizzlin’ sensation is chock full of vegetables and is the perfect combination of sweet and savory. Sautéed broccoli, Brussel sprouts, onions, and carrots are tossed with rice noodles in a lime peanut sauce. The dish is finished with sweet sautéed pineapple and crunchy baby corn.
Ingredients:
-2 Broccoli heads, chopped
-1 cup Brussel sprout, chopped in quarters
-1 red bell pepper, chopped
-2 carrots, peeled and julienned (chopped in strips)
-1/2 cup red onion, sliced
-4 cloves garlic, crushed
-2 cups spinach, chopped
-Cooking spray or about 1 Tbs. olive oil
-1/2 bunch cilantro, chopped
-1/3 cup baby corn, chopped (the ones in the can)
-1 cup pineapple, chopped
-1 recipe lime-peanut sauce
-Salt and pepper
-1/2 package of rice noodles (wide, fettuccini sized)
*I used ½ a 7 oz package, which fed about 3 because it was full of veggies.
Directions:
1. Boil a large pot of salted water. Add broccoli and Brussel sprouts to blanch for 3 minutes. Drain.
2. Over medium-high heat, spray a skillet with cooking spray or olive oil. Add onion and sauté for 1 minute. Add broccoli, Brussel sprouts, garlic, pepper, and carrot and sauté for about 10 minutes. (If you only have small skillets like us, you might want to separate this in two pans so you can get some good browning/char-marks). If the pan seems to get too dry and the veggies seem to be browning too fast you can add a dash of water and place a lid to steam the veggies the rest of the way. Add about ¼ cup of the peanut sauce to the veggies and mix together.
3. Meanwhile, cook noodles for 2 minutes in boiling water, drain, and rinse with cold water. Add noodles to sautéed veggies and add another ¼ cup of the peanut sauce. Add a splash of soy sauce, salt, pepper, and the cilantro. Warm over medium heat for about 3 minutes. Wilt in the spinach at the end.
4. In a small skillet, sauté the pineapple and baby corn for about 5 minutes. Toss in with noodles and veggies.
5. Serve with additional peanut sauce and soy sauce. Garnish with more cilantro and chopped nuts. Mmm…
Tips: Try adding snow peas, bean sprouts, or chopped peanuts!
