This is a family favorite. If you can find a good deal of fresh halibut give this recipe a try. Two variations are given below: one with pesto, one with a creamy garlic sauce...but all with a crispy and delicious macadamia nut crust!
*~2 pounds fresh halibut
*2 lemons, cut in wedges
*~1/2 cup pesto (recipe on blog)
*~1/2 cup creamy garlic sauce (recipe to come)
*1 onion, diced
*1 cup macadamia nuts, chopped
1. Rinse halibut well and pat dry with paper towels thoroughly. We had two one pound filets.
2. Squeeze lemon juice all over halibut.
3. Place fish on a large piece of doubled-up foil.
4. Brush one filet all over with pesto and the other with creamy garlic sauce. (Note you could also simply use a bit of olive oil, garlic, salt, pepper, and a bit more lemon juice).
5. Top each filet with chopped onions.
6. Place about 3 thinly sliced lemon slices or wedges on top of the onion. (This looks really pretty and adds a bit more citrus flavor).
7. On a grill that is preheated to about 350 degrees (medium heat), transfer the entire foil sheet with fish on it. (This is an indirect cooking method so as to not dry out the fish). Cook for about 15 minutes at medium heat on covered grill. After 15 minutes, add the chopped macadamia nuts to the top of the halibut so they get nice and toasty. It is okay if some fall onto the foil, they will just get toasted!
8. Cook for about 15 more minutes or until cooked through but not dry. To tell if the fish is done, cut into the thickest part of the fish and make sure all the flesh is opaque and not translucent.
This is a great holiday meal or simply a great way to cook halibut (also could be done in the oven at 350 degrees).
