Experimentation with sweet potatoes and a healthy burger = great success!
Sweet Potato Veggie Burgers
Ingredients
*2 sweet potatoes, peeled and chopped into 1 inch cubes
*1/2 red onion, chopped
*2 Tablespoons Olive Oil
*1/2 cup carrots, peeled and chopped
*1 teaspoon salt
*1/2 teaspoon black pepper
*1/3 cup cilantro, chopped
*3/4 cup chopped broccoli (frozen broccoli is great, just microwave, drain, and chop finely)
*1/3 cup red bell pepper, finely chopped
*1/4 cup red onion, finely chopped
*3 cloves garlic, crushed
*1 egg
*1 teaspoon cumin
*more salt and pepper to taste
*About 2 Tablespoons flour to dust the surface
Directions:
1. Preheat oven to 375 degrees. On a baking sheet, toss together the olive oil, sweet potatoes, red onions (the first bunch), carrots, salt, and pepper. Roast for 30 minutes or until the sweet potatoes and carrots are tender. Stir every 10 minutes.
2. When veggies are finished roasting, mash them together in a large bowl (I left some chunks of onion and potato in it for texture). Add broccoli, garlic, red pepper, onion, cumin, salt, and pepper. Stir to combine. Add the egg and stir to combine.
3. Form the mixture into patties (should make 5 to 6 round patties). They will be sticky!
4. Place on foil and dust both sides of each patty with a bit of flour.
5. Heat about 1 1/2 tablespoons of olive oil in a large skilled over medium heat. Cook burgers in batches for about 3 minutes on each side, until golden.
Cilantro Pesto
In a food processor or blender combine about 3/4 cup fresh cilantro, 1 cup fresh spinach, 2 Tablespoons olive oil, 2 cloves of garlic, 1/3 cup roasted red pepper, 1/4 cup feta cheese, 1 teaspoon cumin, and salt and pepper to taste. Blend until smooth and creamy.
To Serve:
There are soooo many ways to serve this. You can go the burger route or the salad route (delicious over wilted spinach and sauted veggies with cilantro pesto). Here are some of our favorites:
*Saute some red bell pepper strips with some sliced red onions with a bit of garlic for about 5 minutes. Turn off the heat and crumble about 1/3 cup feta cheese into the warm veggies.
**BURGER ROUTE: Toast your favorite type of hamburger bun or pita and spread both sides with cilantro pesto. Add your sweet potato patty and some of the sauted feta-veggie mix and fresh spinach. Top with the burger bun and EAT! :)
**SALAD ROUTE: In a skillet, add a splash of olive oil or cooking spray and quickly wilt some fresh chopped spinach for about 1 minute (slightly wilted). Season with salt and pepper. Plate spinach and top with a warm sweet potato veggie burger. Spread some of the cilantro pesto on top of the patty and top with some of the feta-veggie mix. Delicious!!
Don't forget to serve the sweet potato fries along with your burgers! :)

Kelly's Kut Rating: Although this recipe takes a bit of time, the end result is worth it. A couple tips on making these burgers: 1.) After roasting the sweet potatoes, onions, and carrot, pour the warm veggies into a big bowl and mash up with a fork (leave some texture), 2.) The patties will be sticky when you shape them, so no worries, and 3.) You can substitute other veggies for the broccoli such as edamame, zucchini, squash, corn, or black beans.

Renee's Mmmmm-gasm Scale: Kelly officially outdid herself with this number. I love veggie burgers, and I had no idea how good a homemade one could be. SWEET JESUS. Ok, so first thing's first, the sweet potato base was absolutely amazing, with that sweetness meshing so well with the savory flavors of feta, cilantro, and red onion. The slivered red bell pepper and onion that was placed on top was a lovely addition. The texture of the patty was quite soft, and at one point, part of it fell out of the bun, but in no way did it deter me from savoring every last crumb. I can honestly say that this burger delivered 10,000 food orgasms and then some. It's one of those times when the food is so good, you could almost cry. (I am absolutely serious when I say this.)

Stephanie's Hotty Hot Hotness Rating: The best veggie burgers are those when you can actually make out the pieces of vegetables within the patties, and these definitely qualify! Just looking at the picture of the juicy burger make my mouth water. I had a burger the day I got back from a trip to California, and they made my return to 51 Porter complete.
